Spaghetti Squash and Venison Sauce

My wife and I have made a total lifestyle change and are now fully committed to the Paleo diet.  Here’s a recent meal we made, straight from her blog that uses spaghetti squash instead of regular flour spaghetti noodles and venison in the meat sauce.

Ingredients:

  • 1 Spaghetti Squash
  • 1 lb. Ground Venison
  • 1 jar Pasta Sauce – I use Classico Tomato and Basil (has all natural ingredients, salt is listed last)
  • 2 Cloves of Garlic, minced

Process:

Spaghetti Squash:

  • Heat Squash up in Microwave for 1 Minute. Slice in half long ways. (This takes some muscle)
  • Clean out the seeds and all the membrane (just like a pumpkin).
  • Lay each half on a cookie sheet, cut side up.
  • Bake in the oven for 40 minutes-or until fork tender.
  • Remove and let cool for about 3 minutes.
  • Take a fork and scrape the squash out – it will come out in long strands like spaghetti noodles.

Venison Sauce:

  • In a saucepan, brown venison completely.
  • Add 2 cloves of mince garlic. Allow to simmer for 2 minutes.
  • Pour in 1 jar of Pasta Sauce. Allow to simmer until warm.

Plate spaghetti squash and pour sauce over top. Serve with spinach salad and enjoy.
