Paleo Crunch – Delicious and Healthy Hunting Snack

My wife convinced me to try out the Paleo diet with her, so I’ve had to change up the food I usually eat while hunting.  The go-to food for me while hunting is PowerBars, which I always keep a few in my hunting pack.  I love the peanut butter flavor and will have one as breakfast, as well as keeping one or two for a snack throughout the day if I’m going to be in the stand or out in the woods for a long time.  Since PowerBars aren’t “Paleo approved,” I needed to find something else.  Fortunately, my wife made Paleo Crunch the first day of our diet and I knew exactly what would be my hunting snack.  This stuff tastes great and is really easy to make.  Here’s the recipe: 

Paleo Crunch

Paleo Crunch With Blueberries

 

1/2 c raw pumpkin seeds

1/2 c raw sunflower seeds

1 c almond meal

1 c shredded unsweetened coconut 

2 c raw slivered almonds

1/2 c grape seed oil(or coconut oil)

1/2 c raw organic honey 

1 tsp vanilla

Preaheat oven to 325. In a large bowl, add seeds, almond meal and almonds, mix well. Add in honey, oil and vanilla. Mix well. Place wax paper on a cookie sheet and spread thin on a baking sheet and bake for 25 mins. Stir or flip over and bake for 5 more mins. Cool for 5-10 mins. Store in tupperware or freezer bag to keep it from getting stale.

I really don’t like almonds, so my wife left out the almonds and almond meal.  It was great.  She also recommends baking for only 20 minutes instead of the suggested 30.  Break it apart, put it in a bag, and throw it in your hunting pack for a great snack.
